Parmigiano Reggiano must be made in Italy, must be made of unpasteurized cow milk, and must be aged at least 18 months. The resulting cheese is often called The Kingo of Cheese for its dense, dry, flaky texture and radical, complex flavor that is sweet, salty, spicy and mouthwatering all at one time. This Parmigiano Reggiano can be grated for topping pasta, salads or vegetables. Parmigiano Reggiano is made with animal (not vegetarian) rennet and is gluten-free.
